Sweet Potato, Spinach and Lentil

Ingredients

  • 1 sweet potato washed, peeled and chopped
  • 1 cup fresh baby spinach washed thoroughly
  • 1/4 cup lentils you can use red, green or yellow lentils
  • 1 cup water

Instructions

  1. Place 1 cup of water into a small pot and bring to a boil.

  2. Add the lentils and let boil for 1 minute.

  3. Reduce heat to low, cover and let simmer for about 45 minutes until the lentils are completely cooked through.

  4. Pour water into a pot until it is about 2" inches deep and bring to a boil over high heat.

  5. Place the sweet potato into your Sage Baby Eco-Steamer and put into the pot.

  6. Cover and steam for 10-12 minutes, until the sweet potato is fork tender all the way through. You can either steam the spinach with the sweet potato or leave it raw.

  7. Using your Sage Baby Puree & Blend food processor or immersion rod, blend the sweet potato, lentils and spinach until desired texture is achieved. For Stage Three, we recommend a chunk-a-licious consistency - thick and lumpy with soft chunks to help baby learn to chew. Avoid any hard chunks.

Recipe Notes

  • This meal will stay fresh in your Sage Jars or Sage Squeezies for up to 3 days in the fridge and up to 3 months in the freezer.
