These yogurt pancakes are seriously the best. Over the years, I’ve played around with dozens of pancake recipes and this recipe makes the best pancakes ever. Super fluffy and sweet so you don’t even need extra syrup. To save time in the morning, you can pre-make the batter the night before and store it in an airtight jar. Then all you have to do is cook them up in the morning.

Yummy Yogurt Pancakes
Ingredients
- 2 eggs
- 1 1/3 cups yogurt (dairy or dairy free) I like to use vanilla coconut milk yogurt
- 1 1/3 cups milk (dairy or dairy free) I like to use coconut milk
- 2 1/2 cups self rising flour
- 3-4 tbsp maple syrup Avoid using “pancake syrup. It tastes a lot different than maple syrup.

Instructions

Crack the eggs into a medium sized bowl and beat lightly with a whisk or fork.

Add the yogurt and milk. Mix well to incorporate.

Add the flour and maple syrup. Mix well to incorporate.

Heat 2 tbsp of coconut oil in a large skillet over medium-high heat. Pour small amounts of pancake batter into the skillet leaving enough room between each one for the batter to spread out while cooking.

Reduce heat to medium and cook the pancakes for 2 minutes on each side.

Add a little more oil to the pan with each batch, reduce heat to medium-low, if necessary.

Leftovers can be stored in an airtight container for up to 3 days in the fridge and 3 months in the freezer. You can reheat by just popping in a toaster.
